Take a normal bun mixture, but add spices like cinnamon and nutmeg, orange juice, chopped apple and red grapes and once turned out and still hot, brush over pine syrup for a tangy sticky glaze and sprinkle with sugar. Unlike a sugar glaze, pine syrup gives a lovely caramel spicy flavour and a lovely golden finish. The syrup can be warmed and used to coat fruit breads, to glaze biscuits and any cakes or buns that need a little colour when baked. ♦
