Rollmops and Hot Dipping Conifer Sauce

A simple starter to a richer meal, pickled herring, Rollmops, served traditionally with green olives and gherkins.  Here we serve with a chilli, gherkin, ginger and conifer syrup dipping sauce. The day before chop green and red chilli’s, scotch bonnets give a real kick of heat, and grate ginger.  Add to a small dish of…

Conifer syrup marinade – mustard hot

My absolute favourite marinade and if a little more soy sauce, is a mix of conifer syrup, a little or a lot of hot mustard [try with different types and whole-grain for extra texture], and a good slug of soy sauce.  Tamarind sauce, Worcester sauce, or any other dark vinegar based sauces work too. Light Winter Salad

Indulge in a light winter salad after too much indulgence. Crunchy apples, pears, fennel, green leaves and a drizzle of warming stilton, yoghurt and Conifer Syrup.  Add seeds for crunch and fresh dill.

Syrup for Sharing

Combine flavours with textures, creamy with crunch, sweet with salty. Earthy mushrooms with dates, apricots, orange and pistachios.  Rose petals add fragrance to the Conifer Syrup. Lazy afternoons

Sweet and Sour Marinade

I love the contrast of sweet and sour. It keeps the taste buds on alert and brings out the subtle flavours of seafood and fish.  This simple marinade uses our sweet conifer syrup, a squeeze of lime juice for sour, dill for aromatic and a very good balsamic.  Be careful with balsamic.  There are hundreds on…

Warm Garlic For Winter

Roasted garlic is lovely in winter.  Its soft creaminess adds a earthiness to roast potatoes, roasted root vegetables and white fish.  A couple of pre-roasted cloves, lime and black pepper added to cod, wrapped in foil and baked for twenty minutes is quick and yet aromatic. Black garlic is becoming popular.  These are white cloves…

Not all syrups are made equally

The expectation when you walk into a delicatessen is of unique products, hand-made artisan products, products that have a ethical message behind them.  So often though the products on offer are not upon close inspection anything but. It is a shame to often see branded products on both the deli shelves and on the supermarket…
